About the Speaker
Jacque Nyenhuis is an Assistant Professor of Internal Medicine at UCF COM. She earned a Ph.D. in Educational Foundations and Research and MS and BS in nutrition and food science. She has been fighting for better nutrition for decades. Now she wants to spread the idea that food can be a prescription for better health, that cooking skills matter for wellbeing and that the relationships around the table and sharing food can be just as important as the vitamins and minerals.
She was handed a nutrition course to teach at Louisiana State University in the mid-1980’s and found that nutrition was an enormously misunderstood science. To correct many of the misconceptions, she co-authored a widely circulated nutrition textbook that demonstrated the use of what we today call “culinary medicine” based on what foods are beneficial for good health. Dr. Jacque fell in love with teaching nutrition and worked to encourage people to take nutritional science a little more seriously and the media coverage of nutrition just a little less literal.
Trained in culinary arts, food science and nutrition, she had her own cable TV cooking show and syndicated newspaper and magazine column. “I felt that teaching cooking skills were a great way to point people towards better health, and it still is.” Dr. Jacque is an expert in Culinary Medicine where her passion is teaching others how to talk about nutrition through food preparation and culinary demonstrations. She shares her passion for all things culinary with the UCF medical students and the community at large.
