Devon Newhouse, Ph.D., will trace global influences in Goan cuisine by looking at the history of feni, the first distilled spirit to be awarded a Geographic Indicator (GI) in India. While feni originated from distillation techniques that predated the arrival of Europeans in India, the introduction of cashew by the Portuguese added a new ingredient with which Goans experimented.
This talk will discuss the methods of food studies that illuminate the global influences in Indian cuisine and the funding opportunities like Fulbright that make this research possible.
